So I wanted to try what lechon was tastier from Lechon Manila. The lechon kawali at Lechon Manila had that 3 layers of texture: crispy skin, fat, and meat. Due to the fat the meat on the lechon kawali was moist. The lechon on the combo plate at Lechon Manila had that crispy skin and lean meat. However that lean meat was dry.
